Methionine helps accelerate the coloring in fruits and berries and promotes uniformity in fruit ripening. Phenylalanine is the source of the synthesis of anthocyanins, flavonoids, and cell walls, enhancing the color and firmness of the fruit. The intracellular accumulation of betaine allows for water retention in the cells and reduces the risk of cellular dehydration, enabling better preservation of the fruit; likewise, it increases the amount of fruit that can be processed by the industry.
